I was told that if you swim in the sea - say a brighton for example, only swim out as far as it would take someone to come to you in good time if you were in trouble. Makes sense.

That's how this "old lady" swims - alone, bare-skin, outdoors, during winter in water close to freezing. And by close to freezing I mean 4C (39F) or lower.

Head-up breast is the only recommended stroke for winter swimming as it's essential to keep one's head dry in extreme cold, to avoid cold-shock and hypothermia.
